Growing Fresh Lion’s Mane Mushrooms in Our Vertical Farm – Plus a Festive Recipe!


At Seedleaves, we’re passionate about delivering sustainable, fresh, and delicious produce straight from our vertical farm. This festive season, we’re celebrating one of our most unique crops: Lion’s Mane mushrooms. These fluffy, coral-like mushrooms aren’t just a feast for the eyes—they’re packed with incredible health benefits and an umami-rich flavour that elevates any dish.

Beyond its culinary appeal, it’s packed with health benefits, including potential support for brain health, improved digestion, and a boost to your immune system—just what we all need during the festive season.


From Our Farm to Your Festive Table


This Christmas, we’ve crafted a special recipe to showcase the versatility of Lion’s Mane mushrooms. Perfect as a side dish to accompany your main festive meal, this stir-fry combines the earthy richness of Lion’s Mane with sweet chestnuts and warm spices.


Festive Lion’s Mane with Chestnuts


Ingredients

• 300g Lion’s Mane mushrooms

• 150g cooked chestnuts

• 1 red onion, sliced

• 1 red pepper, julienned

• 2 cloves garlic, minced

• 1 tbsp fresh ginger, finely chopped

• 2 tbsp sesame oil

• 2 tbsp soy sauce

• 1 tbsp honey or maple syrup

• 1 tsp cinnamon

• ½ tsp nutmeg

• 1 tbsp rice vinegar

• Optional: chilli flakes for a festive kick


Method

1. Tear the Lion’s Mane into bite-sized pieces and sauté in sesame oil until golden.

2. Add red onion, garlic, and ginger, cooking until fragrant.

3. Toss in the chestnuts and red pepper, stir-frying for 2-3 minutes.

4. Return the mushrooms to the pan and season with soy sauce, honey, cinnamon, and nutmeg.

5. Serve warm, garnished with parsley or sesame seeds.


This dish is the perfect blend of festive spices and earthy flavours, guaranteed to be a hit at any gathering.
